- 2 tablespoons plain whole-milk greek yogurt
- 1 large egg
- optional: 1 teaspoon turbinado sugar (raw sugar) for sprinkling on top
- vanilla ice cream or whipped cream, for serving
Instructions
- Preheat the oven to 375°F.
- Rinse and drain the blueberries, checking for and removing any stems. Combine blueberries, maple syrup, starch, lemon juice, and cinnamon in a 9-inch square baking dish. Stir until combined and bake for 25 minutes until bubbling around the edges.
- For the topping, mix the almond flour, baking powder, and salt in a bowl. Set aside.
- In a separate small bowl, combine sugar and lemon zest, rubbing the zest into the sugar for enhanced flavor. Mix this sugar blend into the dry ingredients and whisk well.
- Combine melted butter, yogurt, and egg in the smaller bowl and whisk. Pour this wet mixture into the dry ingredients, stirring until a cohesive dough forms.
- Drop spoonfuls of dough over the hot filling, using the back of a spoon for assistance. Sprinkle the dough with sugar.
- Bake for 16 to 20 minutes until the top is lightly golden and the filling bubbles. Let cool for 5 to 10 minutes before serving, optionally with ice cream.
