- ¾ cup fresh blueberries
- 1 tablespoon maple syrup
- 1 teaspoon lemon juice
- ¾ cup 4% cottage cheese
- 3 tablespoons maple syrup
- ½ teaspoon cornstarch
- ½ teaspoon vanilla bean paste
- 1 graham cracker, crushed
Instructions
- Combine the blueberries, honey, and lemon juice in a small saucepan. Bring to a boil, then reduce the heat and simmer for 10 minutes until reduced by half.
- Remove from heat and allow to cool for 10 minutes.
- Blend the cottage cheese, 3 tablespoons of maple syrup, cornstarch, and vanilla bean paste until smooth.
- Layer the cottage cheese mix and blueberry sauce into popsicle molds.
- Sprinkle the crushed graham cracker on top of the layers.
- Freeze overnight or for at least 5 hours.
Notes
Use fresh blueberries for the best flavor, but frozen will work in a pinch.
For added sweetness, adjust the maple syrup to taste based on your preference.
Ensure the popsicles are frozen solid before removing them from the molds.
