- 22 oz. full-fat cottage cheese
- ¼ – 1/3 cup honey
- 1 teaspoon vanilla extract
- 1 cup + ⅓ cup fresh blackberries, separated
- 3 graham cracker sheets, separated
- ½ teaspoon flakey salt (optional)
Instructions
- Combine cottage cheese, honey, and vanilla extract in a food processor and blend until thick and creamy for about 3-5 minutes.
- Add 1 cup of blackberries to the mixture and pulse until blended but still chunky. The color should change to a light purple.
- Transfer the mixture to a bowl or loaf pan and fold in crumbled two graham crackers.
- Top with the remaining blackberries and crumble the last graham cracker on top. Optionally sprinkle with salt.
- Cover and freeze for at least 4-6 hours or overnight.
- Scoop and serve in bowls or on ice cream cones.
Notes
Using full-fat cottage cheese enhances the creaminess of the ice cream.
Adjust honey based on your desired sweetness level.
