Description

This Best Summer Fruit Salad is a delightful mix of fresh flavors, featuring juicy pineapple, strawberries, and kiwis, all dressed with a hint of lemon. Perfect for summer gatherings or a quick healthy snack!

Ingredients

Scale
  • 1 large fresh pineapple
  • 2 pounds strawberries
  • 4 large kiwis
  • 1/4 cup lemon juice (about 1 lemon)
  • 2 tablespoons granulated sugar or honey
  • 1 tablespoon poppy seeds

Instructions

  1. Cut the pineapple into bite-sized pieces and place in a large mixing bowl.
  2. Hull the strawberries, slice them in half, and add to the bowl with the pineapple.
  3. Peel the kiwis, slice them into rounds, and add to the mix.
  4. In a small bowl, combine the lemon juice, sugar (or honey), and poppy seeds, then whisk until blended.
  5. Pour the lemon dressing over the fruit and gently toss to coat evenly.
  6. Serve immediately or chill in the refrigerator for a short time before serving.

Notes

Feel free to substitute other seasonal fruits like peaches or blueberries.
Adjust the sweetness by adding more or less sugar/honey to taste.
This salad is best served fresh but can be stored in the fridge for a day.
