- 1 teaspoon vanilla extract
- 1 sheet store-bought pie dough or homemade, chilled
- 1 egg for egg wash

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a mixing bowl, combine chopped mixed berries, ¼ cup of granulated sugar, cornstarch, lemon zest, lemon juice, and vanilla extract.
- Roll out the chilled pie dough on the prepared baking sheet, leaving enough border for folding.
- Place the berry mixture in the center of the dough, then fold the edges over the berries, creating a rustic galette shape.
- Brush the dough with the egg wash and sprinkle additional sugar on top if desired.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the berries are bubbling.
