Description

Ingredients

  • 2 pounds beef chuck roast cubed or stew meat
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 yellow onion chopped
  • 1 (10.5 ounce) can beef broth
  • 1 (10.5 ounce) can condensed french onion soup or condensed onion soup
  • 1 tablespoon worcestershire sauce
  • 1 bay leaf
  • chopped fresh parsley for garnish, optional
  • 3 tablespoons cornstarch
  • ⅓ cup water

Instructions

  1. Trim any fat from the beef and season with salt and pepper.
  2. Heat 1 tablespoon of olive oil over medium-high heat in a large pot or Dutch oven. Add the seasoned beef in small batches, cooking until browned. Transfer the beef to a bowl and set aside.
  3. Lower heat to medium, add the remaining oil, and stir in the chopped onion. Cook until softened, about 5 to 7 minutes.
  4. Return the beef to the pot and add beef broth, condensed onion soup, Worcestershire sauce, and bay leaf. Bring to a boil, then cover and reduce the heat to a simmer. Cook for 1½ to 2 hours until the beef is fork-tender.
  5. To thicken the gravy, mix the cornstarch with ⅓ cup cold water and gradually stir it into the beef mixture until the desired thickness is achieved.
  6. Taste and adjust seasoning with more salt and pepper if needed. Remove the bay leaf and serve the beef tips over mashed potatoes.

Notes

For added flavor, consider marinating the beef overnight.
Garnish with fresh parsley for a pop of color and flavor.
Serve with crusty bread for a complete meal.
