Description

This Beef Burrito features mouthwatering flavors from seasoned ground beef, black beans, and melted cheese, all wrapped in a warm tortilla. It’s a simple yet satisfying meal great for busy nights or casual gatherings.


Ingredients

  • 1 tablespoon canola oil or neutral cooking oil of choice
  • 1 pound lean ground beef
  • 1 ½ teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ¾ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 small yellow or white onion (¼-inch diced)
  • 1 (15-ounce) can reduced-sodium black beans (rinsed and drained)
  • 1 cup prepared salsa
  • 6 burrito-size flour tortillas (about 10 inches)
  • 2 cups (8 ounces) shredded Monterey Jack, sharp cheddar, or Mexican blend cheese
  • Sour cream
  • Avocado
  • Hot sauce
  • Chopped fresh cilantro

Instructions

  1. Heat oil in a large skillet over medium-high heat. Swirl to coat the pan and add the beef, pressing it into a ½-inch thickness.
  2. Sizzle the beef for 3 to 4 minutes until it starts to form a crust, then sprinkle with chili powder, oregano, cumin, salt, garlic powder, and smoked paprika. Scatter onion on top and break meat into small pieces. Cook until meat is done, about 4 minutes more.
  3. Stir in black beans and salsa, cooking until the liquid is mostly gone, about 1 minute. Season as necessary.
  4. To assemble, place a tortilla on a surface, sprinkle with cheese, top with ⅙ of the beef mixture, and add more cheese on top.
  5. Fold the tortilla sides towards the center, then roll up tightly to secure the filling. Repeat with remaining tortillas.
  6. Warm a nonstick skillet over medium heat and brown each burrito for 1 to 2 minutes on each side until golden. Let cool slightly and serve with desired toppings.

Notes

You can customize the fillings with your favorite toppings such as sour cream or guacamole.
For a little kick, add jalapeños to the beef mixture or use spicy salsa.
These burritos can be made ahead and frozen for quick meals later.
