Ingredients
Scale
- 2.5 lbs chicken thighs boneless skinless
- 2 tablespoons brown sugar
- 2 teaspoons kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- 3 tablespoons avocado oil
- 1 cup homemade southern bbq sauce
Instructions
- In a large bowl, combine chicken thighs with brown sugar, kosher salt, garlic powder, onion powder, smoked paprika, chili powder, and avocado oil. Mix well and let it marinate in the refrigerator for at least 4 hours or overnight.
- Remove the chicken from the fridge 30 minutes before grilling to take off the chill.
- Preheat your grill to medium-high heat while the chicken warms up.
- Place chicken thighs on the grill and lower it to medium heat. Close the lid and cook for a few minutes on each side until charred and marked.
- Baste each piece of chicken with BBQ sauce when almost fully cooked and move them to indirect heat to let the sauce absorb and finish cooking.
- Cook until the internal temperature reads 175-190 degrees F for dark meat (or 165 degrees F for white meat), then serve with additional BBQ sauce.
Notes
Marinating the chicken overnight enhances flavor and tenderness.
For a healthier option, consider baking the chicken instead of grilling.
Always use a meat thermometer to ensure proper cooking.
