Description

This Banana Coffee Cake is a delightful treat bursting with flavor! Made with ripe bananas, a creamy glaze, and a crumbly streusel topping, it’s perfect for any occasion. Easy to prepare and sure to please everyone, this cake is a must-try for your next gathering or simply as a cozy dessert.


Ingredients

  • ½ cup rolled oats
  • 2 tablespoons all-purpose flour
  • 2 tablespoons light brown sugar
  • 2 tablespoons cold unsalted butter
  • 1 teaspoon vanilla extract
  • ½ cup avocado oil + 1 tablespoon, separated
  • 3 large ripe bananas, peeled and halved
  • ¼ cup maple syrup
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • ⅓ cup 5% greek yogurt
  • ½ cup almond milk
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 4 oz. cream cheese, softened
  • ½ cup powdered sugar
  • 23 tablespoons milk

Instructions

  1. Heat 1 tablespoon of avocado oil in a large nonstick skillet over medium heat. Add the halved bananas and cook for 3 minutes, flip, and cook for another 3 minutes until golden brown. Set aside.
  2. Preheat the oven to 350℉ and line an 8×8-inch baking dish with parchment paper.
  3. For the streusel topping, combine oats, flour, brown sugar, butter, and vanilla extract in a mixing bowl. Mix together until crumbly and set aside.
  4. In another bowl, mix together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  5. In a separate bowl, combine maple syrup, avocado oil, vanilla extract, eggs, cooked bananas, yogurt, and almond milk. Mix with an electric mixer until blended.
  6. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  7. Transfer the batter into the prepared baking dish and sprinkle the streusel topping on top. Bake for 20 minutes, cover with foil, and bake for an additional 20 minutes until the middle is mostly baked.
  8. While the cake cools, prepare the glaze by mixing cream cheese, powdered sugar, and milk until smooth.
  9. Let the coffee cake cool for 15 minutes before drizzling with the glaze.

Notes

Make sure the bananas are very ripe for the best flavor and sweetness.
You can substitute Greek yogurt with regular yogurt if needed.
Add nuts to the streusel for an extra crunch.
