- ½ cup all-purpose flour

- 2 whole eggs
- 1 cup panko breadcrumbs
- 1 teaspoon dried parsley
- 2–3 tablespoons olive oil, to drizzle on top of cods
- Chopped parsley, to garnish
- Lemon wedges, to garnish
Instructions
- Preheat the oven to 400 degrees F.
- Pat the cod filets dry with a kitchen towel and set aside.
- Prepare the breading station: In one bowl, mix flour, salt, garlic powder, ground pepper, paprika, and Italian seasoning.
- In a second bowl, whisk the eggs and a splash of water with a fork; set aside.
- In a third bowl, combine panko breadcrumbs and parsley; set aside.
- Coat the cod filets in the flour mixture, dip them in the egg mixture, and then coat with the breadcrumb mixture until evenly covered.
- Place the coated filets on a baking tray lined with parchment paper and spray the tops with cooking spray.
- Bake in the preheated oven for 12-15 minutes or until the cod is cooked through.
- Garnish with chopped parsley and lemon wedges before serving alongside greens.
