Description

  • 2 lb cod filets
  • ½ cup all-purpose flour
  • 1 teaspoon salt, or more to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon ground pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian seasonings
  • 2 whole eggs
  • 1 cup panko breadcrumbs
  • 1 teaspoon dried parsley
  • 23 tablespoons olive oil, to drizzle on top of cods
  • Chopped parsley, to garnish
  • Lemon wedges, to garnish

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Pat the cod filets dry with a kitchen towel and set aside.
  3. Prepare the breading station: In one bowl, mix flour, salt, garlic powder, ground pepper, paprika, and Italian seasoning.
  4. In a second bowl, whisk the eggs and a splash of water with a fork; set aside.
  5. In a third bowl, combine panko breadcrumbs and parsley; set aside.
  6. Coat the cod filets in the flour mixture, dip them in the egg mixture, and then coat with the breadcrumb mixture until evenly covered.
  7. Place the coated filets on a baking tray lined with parchment paper and spray the tops with cooking spray.
  8. Bake in the preheated oven for 12-15 minutes or until the cod is cooked through.
  9. Garnish with chopped parsley and lemon wedges before serving alongside greens.
