- 3 cups shredded chicken
- 1/2 cup salsa
- 1 tablespoon taco seasoning
- 1½ cups refried beans
- 2 cups cheddar cheese
- 4 tostada shells
- 8 ounces shredded lettuce
- Pico de Gallo
- Lime juice
- Sour cream
Instructions
- Preheat the oven to 400˚F.
- In a large bowl, mix together the shredded chicken, salsa, and taco seasoning. In a separate small bowl, whisk the sour cream with lime juice.
- Lay the tostada shells on a baking sheet and spread refried beans over each shell.
- Top the beans with cheddar cheese, add a scoop of the seasoned chicken, and sprinkle more cheese on top. Layer the chicken between cheese to help it stick together while baking.
- Bake in the oven for 8-10 minutes, or until the cheese is melted and the chicken is warmed through.
- Once baked, add the shredded lettuce, pico de gallo on top, and drizzle with the lime sour cream before serving.
Notes
You can use any leftover chicken or rotisserie chicken for a quicker prep.
