- 1 ripe avocado
- 1/4 cup white wine vinegar
- 1 lemon – juice only
- 1 garlic clove
- 3/4 cup avocado oil
- 2 tbsp agave nectar
- 2 tbsp cilantro (or basil, or parsley)
- coarse kosher salt to taste
Instructions
- Prepare your blender or food processor, ensuring it has an opening for adding ingredients while blending.
- Halve the avocado, remove the pit and skin, and place the flesh into the blender or food processor.
- Add the white wine vinegar, lemon juice, agave nectar, garlic clove, cilantro, and salt to the blender (do not add oil yet).
- With the lid closed, blend the mixture while slowly drizzling in the avocado oil until fully incorporated, then blend for a few more seconds.
- Check the consistency and taste. For a thinner dressing, add more avocado oil as needed and blend again.
Notes
For variation, try substituting cilantro with basil or parsley for a different flavor.
