Ingredients

  • ½ cup chopped apple, about 1/2 a large apple
  • 1 teaspoon maple syrup
  • pinch of cinnamon
  • ½ cup old fashioned oats
  • ½¾ cup unsweetened almond milk
  • ¼ cup plain greek yogurt or coconut yogurt
  • 2 teaspoons maple syrup, honey or your favorite sweetener
  • ½ teaspoon vanilla
  • ½ teaspoon cinnamon, or apple pie spice
  • Toppings: cinnamon apples, nut butter, chopped nuts, chia or hemp seeds

Instructions

  1. In a small microwave-safe bowl, combine chopped apple, maple syrup, and a pinch of cinnamon. Microwave for 30 to 60 seconds until softened. Reserve 1/4 cup of this apple mixture for topping later.
  2. In a container with a lid, combine oats, almond milk, yogurt, additional maple syrup, vanilla, and cinnamon.
  3. Stir in the reserved 1/4 cup of cinnamon apples into the oat mixture and shake the jar to combine.
  4. Cover and refrigerate overnight or for at least 30-60 minutes if preparing in the morning.
  5. When ready to serve, remove the lid, and add more yogurt or almond milk to achieve desired consistency. Top with additional apples and your choice of toppings like nut butter or chopped nuts.

Notes

Feel free to adjust the level of sweetness to your liking by using more or less maple syrup.
For a creamier texture, add extra yogurt or almond milk when serving.
This recipe can easily be doubled or tripled for meal prep throughout the week.
