This Apple Coffee Cake is a delightful treat featuring fresh apples, a soft and moist texture, and a hint of cinnamon. Perfect for brunch or a cozy afternoon snack, it’s easy to make with simple ingredients that come together beautifully.

Ingredients

Scale
  • 3 cups (360g) all-purpose flour
  • 2 cups (426g) brown sugar, packed
  • 2 ½ tbsp cinnamon
  • 1 ½ tsp salt
  • 1 cup (226 grams) unsalted butter, melted
  • 3 cups (360g) all-purpose flour
  • 2 ½ tsp baking powder
  • 1 tsp salt
  • 1 cup (226g) unsalted butter, softened
  • 2 cups (396g) granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup (227g) sour cream
  • ½ cup (118ml) milk
  • 2 ½3 cups (about 285-315g) diced apples, cut into ¼-inch chunks
  • 1 cup (113g) powdered sugar
  • ½ tsp vanilla extract
  • 24 tbsp heavy cream or milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking pan, ensuring it measures correctly for the recipe.
  3. In a large bowl, combine the all-purpose flour, brown sugar, cinnamon, and salt.
  4. Melt the unsalted butter and add it to the dry ingredients along with the baking powder and remaining salt.
  5. In another bowl, combine granulated sugar, eggs, vanilla extract, sour cream, and milk. Mix well.
  6. Gradually add the wet mixture to the dry ingredients, stirring until smooth.
  7. Fold in the diced apples gently until evenly distributed in the batter.
  8. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  9. In a separate bowl, mix powdered sugar and vanilla extract; add heavy cream or milk gradually to reach desired consistency for frosting.
  10. Bake in the preheated oven for about 45-50 minutes or until a toothpick inserted in the center comes out clean.
  11. Let the cake cool before drizzling the frosting on top.

Notes

Make sure to use a properly sized pan to ensure even baking.
Feel free to add nuts or raisins to the batter for extra flavor.
Store leftovers in an airtight container at room temperature for up to three days.
