- 1 cup peeled cored, and chopped apples (½” pieces)
- ⅛ teaspoon ground cinnamon
- 1 tablespoon dark brown sugar
- 1¼ cups all-purpose flour
- ¾ teaspoons baking powder
- ¼ teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ½ cup unsalted butter melted
- ¾ cups dark brown sugar packed
- 1 large egg room temperature
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- ¼ teaspoon vanilla extract
- ½ teaspoon cinnamon
- 2 tablespoons milk
Instructions
- In a frying pan over medium heat, combine the prepared apples, brown sugar, and cinnamon. Cook for about 5 minutes until the apples soften, then transfer to a plate to cool.
- Preheat the oven to 350°F and line an 8×8” pan with parchment paper, leaving some overhang for easy removal later.
- In a large bowl, mix together flour, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk together melted butter, brown sugar, egg, and vanilla until smooth.
- Combine wet ingredients with dry ingredients and gently fold until most of the flour is incorporated. Add cooled apples along with their juices, mixing until evenly distributed.
- Spread the batter into the prepared pan and bake for 18-22 minutes until the top is lightly browned. Avoid overbaking!
- Allow to cool on a wire rack before icing.
Notes
For a richer flavor, consider using a mix of cinnamon and nutmeg in the batter.
Allow the blondies to cool completely before icing to ensure the icing doesn’t melt off.
Store any leftovers in an airtight container at room temperature for up to 3 days.
