Description

Enjoy these Air Fryer Greek Roasted Potatoes, bursting with tangy flavor and a crispy texture. Perfect for quick dinners, these potatoes are easy to prepare with just a few staple ingredients and deliver satisfying comfort food for the whole family.


Ingredients

  • 3 pounds baby yukon gold potatoes
  • ¼ cup greek salad dressing
  • 1 1/2 teaspoons greek seasoning blend
  • ½ lemon juice of
  • Fresh minced parsley for garnish

Instructions

  1. Chop the potatoes in half, quarter any large ones, and place in a large bowl with cold water. Let soak for 30 minutes.
  2. Drain and rinse the potatoes with fresh water.
  3. Thoroughly dry the potatoes, then combine them in a mixing bowl with the salad dressing and seasoning. Toss to coat evenly.
  4. Spray the air fryer basket with non-stick spray, then add the potatoes. Air fry at 400 degrees Fahrenheit for 20 minutes, shaking the basket every 5 minutes.
  5. Taste the potatoes and add more Greek seasoning if desired. Finish with a sprinkle of fresh parsley and a squeeze of lemon juice before serving.

Notes

For added flavor, let the potatoes soak longer in the water if you have time.
Feel free to adjust the seasoning according to your preference.
