Description

These Valentine strawberry yogurt bites are a delightful combination of fresh strawberries, creamy yogurt, and crunchy granola. With simple preparation and wholesome ingredients, they are perfect for a healthy snack or a sweet treat any time.


Ingredients

  • ½ cup granola, more for topping
  • 1 cup yogurt of choice
  • ½ cup fresh strawberries, hulled and diced
  • ¾ cup fresh strawberries, sliced or chopped
  • ¼ cup granola, smaller pieces work better

Instructions

  • Line a 12-cup muffin pan with muffin liners or use a silicone baking pan.
  • Sprinkle about 2 teaspoons of granola into the bottom of each cup, then set aside.
  • In a medium bowl, combine yogurt and diced strawberries. Using a pastry cutter or fork, mash the strawberries into the yogurt until mostly mixed, leaving a few chunks.
  • Stir and fold the mixture with a rubber spatula or wooden spoon until well combined.
  • Spoon 2 tablespoons of the strawberry yogurt mixture into each cup, ensuring an even layer and smoothing it out by tapping the pan.
  • Press approximately 1 tablespoon of sliced strawberries into the top of each cup.
  • Sprinkle about 1 teaspoon of granola over the strawberries for added crunch.
  • Place the pan in the freezer and chill until firm, approximately 2-4 hours.
  • Once frozen, pop out each yogurt bite, let them thaw for a few minutes, and then enjoy.

Notes

Feel free to customize the flavors by using different fruits or yogurt types.
These bites can be stored in an airtight container in the freezer for up to a month.
You can also use silicone molds for easy removal.
