Description

These Strawberry Swirl Marshmallows are a delightful treat with a unique flavor and soft texture. Using fresh strawberry jello and a few simple ingredients, this recipe provides an engaging way to enjoy a homemade dessert. Perfect for parties, snacks, or as a sweet gift!


Ingredients

  • 1/4 cup powdered sugar
  • 2 tablespoons cornstarch
  • 2 packets of unflavored gelatin
  • 1 cup water divided
  • 3/4 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 3 ounces strawberry jello
  • 3 teaspoons strawberry extract
  • 2 drops red gel food coloring

Instructions

  • In a small bowl, combine the unflavored gelatin with 1/2 cup of water and let it bloom.
  • In a large saucepan, mix the granulated sugar, corn syrup, remaining 1/2 cup of water, and salt. Place over medium heat and allow it to reach 240°F.
  • Stir in the strawberry jello until well combined.
  • Pour the hot sugar mixture into a stand mixer bowl containing the bloomed gelatin to dissolve it.
  • Whip the mixture with the whisk attachment for 8 to 10 minutes until it becomes fluffy and stiff.
  • Meanwhile, prepare an 8×8 inch square pan by lightly spraying it with nonstick baking spray.
  • In a separate bowl, mix the powdered sugar and cornstarch, reserving half for later use on top of the marshmallows.
  • Dust the greased pan with the powdered sugar and cornstarch mixture.
  • One minute before the whipping is done, add the strawberry extract and food coloring, continuing to beat until well mixed.
  • Pour the marshmallow mixture into the prepared pan.
  • For a red swirl effect, add 1 to 2 additional drops of food coloring and use a skewer to swirl it.
  • Top the marshmallows with the reserved powdered sugar and cornstarch mixture, ensuring full coverage.
  • Allow the marshmallows to rest for at least 4 hours or overnight to set firmly.
  • Once set, cut the marshmallows into 12 pieces using a sharp knife, dusting it with the powdered sugar/cornstarch mix if needed to prevent stickiness.
  • Toss the cut marshmallows in additional powdered sugar to keep them from sticking.

Notes

Ensure the gelatin is fully bloomed before adding it to the sugar mixture for the best texture.
For even fluffier marshmallows, whip the mixture until it reaches a stiff peak consistency.
Feel free to adjust the amount of food coloring for desired intensity.
