- 2 medium zucchinis sliced into half-moons
- 1 cup cherry tomatoes halved

- 1 teaspoon dried oregano
- 0.5 teaspoon dried basil
- 0.5 teaspoon smoked paprika
- 0.5 teaspoon salt

- 0.5 cup shredded mozzarella cheese or feta for mediterranean touch
- 0.25 cup grated parmesan cheese

Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil.
- In a large bowl, mix chicken pieces, sliced zucchini, halved cherry tomatoes, red onion slices, and minced garlic.
- Drizzle 2 tablespoons olive oil over the mixture, then add oregano, basil, smoked paprika, salt, black pepper, and optional red pepper flakes. Mix thoroughly to coat everything with oil and seasonings.
- Spread the mixture evenly in the prepared baking dish.
- Sprinkle mozzarella and Parmesan cheese over the top.
- Cover the dish tightly with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 to 15 minutes until the cheese is golden and bubbly with the chicken cooked to an internal temperature of 165°F (75°C).
- Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh parsley.
- Serve warm alongside rice, quinoa, pita bread, or a fresh salad.

Feel free to substitute chicken with turkey for a lighter option.
