Description

  • 1 yellow onion, chopped
  • 1/3 cup crumbled blue cheese
  • 1/4 cup panko breadcrumbs
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 tablespoons unsalted butter
  • 4 beef tenderloin, filet mignon steaks (~8 ounces each)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

Instructions

  • Preheat the oven to 450 degrees.
  • Melt 2 tablespoons of butter in a large skillet over medium heat.
  • Add chopped onions and cook, stirring occasionally for 3-4 minutes until translucent.
  • Transfer the cooked onions to a mixing bowl and let them cool for 2-3 minutes.
  • Mix in the blue cheese, panko breadcrumbs, salt, and pepper, gently mashing the ingredients together with a fork.
  • In the same skillet, add the remaining 2 tablespoons of unsalted butter over high heat.
  • Season the filet mignon steaks all over with salt and pepper.
  • Sear the steaks on each side for about 3 minutes until browned.
  • Top the seared steaks with the blue cheese mixture, then transfer them to the oven for 4 minutes for rare or longer for desired doneness.
  • Cover with foil and let the steaks rest for 10 minutes before serving.
