- 4 beef tenderloin, filet mignon steaks (~8 ounces each)

Instructions
- Preheat the oven to 450 degrees.
- Melt 2 tablespoons of butter in a large skillet over medium heat.
- Add chopped onions and cook, stirring occasionally for 3-4 minutes until translucent.
- Transfer the cooked onions to a mixing bowl and let them cool for 2-3 minutes.
- Mix in the blue cheese, panko breadcrumbs, salt, and pepper, gently mashing the ingredients together with a fork.
- In the same skillet, add the remaining 2 tablespoons of unsalted butter over high heat.
- Season the filet mignon steaks all over with salt and pepper.
- Sear the steaks on each side for about 3 minutes until browned.
- Top the seared steaks with the blue cheese mixture, then transfer them to the oven for 4 minutes for rare or longer for desired doneness.
- Cover with foil and let the steaks rest for 10 minutes before serving.
