- 4 tablespoons chia seeds
- 1 cup almond milk
- ½ tablespoon maple syrup, honey or sweetener of choice*
- ¼ teaspoon vanilla extract, optional
- toppings of choice: fresh berries or other fruit, granola, nut butter, etc
Instructions
- In a bowl or mason jar, combine chia seeds, almond milk, maple syrup, and vanilla if desired. If using a mason jar, secure the lid and shake well.
- Allow the mixture to sit for 5 minutes, then stir again to eliminate any clumps of chia seeds. Cover and refrigerate for 1-2 hours or overnight until thickened. If the desired thickness is not achieved, add more chia seeds and refrigerate for an additional 30 minutes.
- Store the chia pudding in an airtight container in the refrigerator for up to 5-7 days.
