Description

These Baked Parmesan Hash Brown Cups are packed with flavor and are incredibly easy to prepare. Made with crispy hash browns, rich parmesan, and fresh green onions, they make for a delightful snack or appetizer healthy enough for any meal!


Ingredients

  • 2 cups frozen hash browns (thawed)
  • 1 cup freshly grated parmesan cheese (divided)
  • 2 large eggs
  • 2 green onions (chopped)
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  • Preheat the oven to 400°F (200°C) and grease a muffin tin with nonstick spray.
  • In a bowl, combine the thawed hash browns, half of the parmesan cheese, eggs, salt, and black pepper.
  • Scoop about 2 tablespoons of the mixture into each muffin slot and firmly press down to shape into cups.
  • Bake for 20-25 minutes until they turn golden brown and crispy.
  • Take them out of the oven, sprinkle on the remaining parmesan cheese, and return to bake for another 5 minutes until bubbly.
  • Garnish with the chopped green onions and serve warm.

Notes

For extra flavor, add minced garlic or diced bell peppers to the mixture.
Make sure to thoroughly thaw the hash browns for the best texture.
These cups can be stored in an airtight container in the refrigerator for up to 3 days.
